📝 Ingredients

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tsp kosher salt

  • ½ cup cold unsalted butter, cut into cubes

  • 1 cup whole milk (or buttermilk for tang)

  • ½ cup grated cheddar cheese

  • 2 tsp mixed dried herbs (thyme, rosemary, parsley)

  • Extra butter for brushing (optional)

👩🍳 Directions

  1. Preheat & Prep:
Preheat oven to 200 °C (400 °F). Line a baking sheet with parchment paper.

  2. Mix Dry Ingredients:
In a large bowl, whisk together flour, baking powder, salt, and dried herbs            Add Butter & Cheese:
Using a pastry cutter or fingers, work in cold butter until the mixture is crumbly with pea-sized pieces. Stir in the cheddar cheese.

  3. Bind the Dough:
Pour in the milk and gently mix until just combined—avoid overworking the dough to keep it tender

  4. Drop & Bake:
Drop large spoonfuls (~2 Tbsp) of dough onto the prepared sheet. Bake for 12–14 minutes until golden and firm.

  5. Finishing Touch:
Brush with melted butter immediately upon exiting the oven, if desired.

🔧 Chef Tips

  • Use cold butter to create pockets of steam for a flaky texture .

  • Gentle mixing preserves the biscuit’s crumb—overmixing leads to toughness.

  • Don’t shape—the drop biscuit method gives rustic charm and a soft inside
